Beef Stew!

Canning up Beef Stew..
5lbs beef stew meats
1 Tbsp. Veg. oil
12 cups potatoes peeled/cut/cubed
8 cups carrots sliced
3 cups onion chopped
1 1/2 Tbsp. salt
1 Tsp. Thyme
1/2 tsp. ground pepper
4 qts of water or enough too cover meat/veggies

Brown meat then add veggies and seasoning. Cover with boiling water and bring this too a boil. Remove from heat add into Hot Canning Jars. Seal in put into a Pressure Cannier. Quart  jars 10 pd Pressure for 1 hr 30 minutes. Pints would be for 1 hr. 15 min)

combined all and getting it to come to a boil.

Jars ready! 
and know waiting for my pressure cannier too complete the job. Will post a picture of the finial out come.

What a great meal to get out of pantry in the cold winter months. Yummy!

Pickled Beets

using gloves helps so much not too get your hands purple.

while hot take skins off place beets into jars 

Pickled Beet by my Aunt Rebecca


1 cup water
2 cups red cider vinegar
3 cups sugar
Bring to boil pour over cooked beets
(6 pints)

or
4 1/2 cups water
9 cups red cider vinegar
13 1/2 cups sugar
Bring to boil pour over cooked beets
(12 quats)


pour sugar syrup over beets and seal.

Skillet Ginger Cookie

Just love cooking in my cast-iron griddle pan.
Here is a yummy recipe from my maryjane magazine.

Skillet Ginger Cookie

1 cup flour
1/4 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 1/2 tsp. ground ginger
1/2 cup butter, softened
1/4 cup sugar
1/4 cup dark brown sugar
1 egg
1 tbsp. molasses
1 tsp. pure vanilla extract

Icing
2/3 cup powdered sugar
5 tsp. milk

Preheat oven to 325 F. Generously butter a 10 1/2 cast-iron griddle pan.
Make cookie: In a small bowl, combine  flour, baking powder, baking soda , salt, ginger; set aside.
 In a medium bowl cream butter, sugar, and brown sugar together, scraping bowl occasionally. Add egg, molasses, and vanilla; continue mixing until smooth.
Add flour mixture to butter mixture and mix until smooth. Spoon mixture onto prepared griddle pan. Lightly butter hands and flatten mixture so that it touches the edges of the pan. Bake cookie for 25 minutes. Cool completely in pan.
Once cookie is cool, prepare icing: In a small bowl, combine powdered sugar and milk; mix until smooth. Drizzle mixture over center of cookie. Using the back of a spoon, spread icing out in a smooth layer. Let dry for 10 minutes and enjoy.

Easy Concord Grape Juice Recipe

Getting ready for winter!!Pick Concord grapes on homestead and thought I'm going too try making Grape Juice.

In sterilized canning jar place 2 cups grapes


Add 1/2 cup sugar in each jar, then fill to top with boiling water. Seal jars at once process in water-bath cannier. For 10 minutes....

Let juice stand 3 to 4 weeks before using. Strain Jice from grapes and use juice.
